These air fryer chicken skewers, with mini air fried corn on the cobs are a quick and healthy lunch.
Chorizo is a fantastic meat with plenty of flavour but it does naturally contain quite a bit of fat. Which is why I love cooking it in the air fryer. There is no need to add more than a light spray of oil to aid the cooking process. And the fats which do come out of the chorizo as it cooks will drip away from the meat rather than being absorbed back into it. This makes the air fryer the perfect tool for cooking chorizo as you keep all of the amazing flavour. But with much less fat which makes for a healthier meal.

Essential kit
You will need an air fryer and wooden skewers.
Ingredients
1 chicken breast
100g of chorizo
1 red onion
Cherry tomatoes
Iceberg lettuce
Vegetable oil spray
Method
I sliced the chicken into bite size pieces, and did the same with the chorizo and onions. Then I placed the chicken, chorizo, onion and cherry tomatoes on to wooden skewers which I had pre-soaked in water to stop them burning in the air fryer.
I then sprayed the skewers with olive oil and popped them into my air fryer drawer. Cook them on 180c for around 20 to 25 minutes. I turned my skewers half way through the cooking to make sure they were crispy on both sides. Always check your food is cooked through before serving.
Once cooked, I carefully lifted the chicken and chorizo skewers out of the air fryer drawer and served in an iceberg lettuce boat with mini air fried corn on the cob.
The combination of chicken and chorizo on these skewers provides a balance of lean protein and rich, smoky flavour. The red onion and cherry tomatoes add a touch of sweetness and a burst of freshness. Serving them in iceberg lettuce boats not only adds a crisp texture but also makes for a fun and visually appealing presentation.
