KIT you will need an air fryer, mixing bowl and food processor.

Ingredients for Air Fryer Beetroot Hummus

3 large beetroots

1 tin of chickpeas, drained

2 tablespoons of tahini

1 large lemon

2 cloves of garlic, peeled and grated

Method

I boiled my beetroots for around 30 minutes with the skins on, which helps retain their beautiful colour and earthy flavour. Alternatively, you can roast or steam them if you prefer a deeper, caramelised taste. Once they were tender, I let them cool slightly before removing the skins – they slip right off with minimal effort once cooked.

After peeling, I sliced the beets and gave them a light spray with Fry Light oil. I placed the slices into the air fryer and cooked them at 200°C (about 400°F) for 8 minutes. This step adds a subtle crispness and enhances the flavour, giving the beetroot a rich, roasted taste.

Once cooked, I transferred the beetroot slices into a blender along with a tin of drained chickpeas (reserving a few for topping), two tablespoons of tahini, the juice of one large lemon, two grated garlic cloves, and a generous seasoning of salt and pepper. I blended the mixture until completely smooth, creating a vibrant, creamy hummus packed with nutrients and flavour.

To serve, I spooned the beetroot hummus into a bowl, topped it with the reserved chickpeas, and finished it with a drizzle of good-quality olive oil. It’s a show-stopping dip that pairs beautifully with my homemade air fryer flat breads – perfect for scooping up every last bit.

After roasting, allow the beetroot to cool slightly before blending. This helps it mix smoothly with the other ingredients and won’t affect the hummus texture.

4. Use quality tahini
Tahini adds creaminess and richness. Use a good-quality tahini for best flavour and texture as it makes a noticeable difference.

5. Balance flavours
Beetroot is naturally sweet, so balance it with lemon juice, garlic, and a pinch of salt. A splash of apple cider vinegar or a small amount of cumin can enhance the earthy notes.

6. Blend until silky
Use a high-speed blender or food processor and blend for at least 1–2 minutes. Add a little water or olive oil if needed to achieve your preferred consistency.

7. Chill before serving
Let the hummus chill in the fridge for 30 minutes before serving. This allows the flavours to develop fully.

8. Garnish beautifully
Top with a drizzle of olive oil, a sprinkle of sesame seeds, and chopped herbs or feta for an eye-catching finish.
