Air fried Victoria sponge

Who even knew that making cake in the air fryer was even an option or that it would be so easy and turn out so yummy. I certainly didn’t! If you feel like baking isn’t really your thing or your cakes always turn out too soggy or too dry then you need to give this recipe a try. You will be absolutely blown away by the results that your air fryer gives you. I know I was and you won’t make a Victoria sponge any other way again.

This method is a game-changer, taking the guesswork out of baking and ensuring a perfect sponge every time. The air fryer creates a wonderfully moist yet light texture that traditional ovens can sometimes struggle to achieve. I cooked this air fried Victoria sponge recipe with Alexis Conran on the Channel 5 TV show “Air Fryers: Do You Know What You’re Missing” first aired on 17 January 2024!

Essential Kit

You will need: An air fryer, large mixing bowl, three silicone moulds 4″ ones are perfect.

Ingredients

125g of butter, melted
125g of self raising flour
45ml of whole milk
125g of castor sugar
1/2 teaspoon of baking powder
3 eggs
1 teaspoon of vanilla extract
Dash olive oil
Smidge of table salt
Icing sugar to decorate
Strawberry jam
Clotted cream
X6 Fresh strawberries

Method

If you need to pre heat your air fryer (each air fryer is different with this, so you will need to check the manufactures instructions) set to 160c on bake mode.
Start by sieving the flour into a large mixing bowl and add your ingredients to a mixing bowl one by one in order and mix with your hand whisk.
When ready pour your mixture into your silicone moulds until about two thirds full (they need space to rise a little), smooth over the top with a teaspoon for an even finish and place in your air fryer on 160c on bake mode for 20 minutes.

While the cakes are cooking, slice your strawberries ready for the topping. When cooked carefully remove your cakes from the air fryer, be extra careful as the basket will be hot.

Carefully remove from the silicone moulds and cool your cakes on your cooling rack for about 5 to 10 minutes. Slice your cakes in half through the middle and spread on a thick layer of strawberry jam to one side and then the clotted cream on the top. Place the other half of the cake on top to make a sandwich.

Spread on some of the clotted cream to the top of you air fried Victoria sponge and add your sliced strawberries to decorate and scatter a teaspoon of icing sugar, through a sieve to finish. These are the perfect little cakes to serve alongside a picnic on a lovely summers day. They not only taste fantastic but also bring a touch of ‘elegance’ to any setting. Plus, with minimal clean-up, you can enjoy your time with friends and family rather than spending it in the kitchen.
