We all know that we should be eating plenty of vegetables, and not just that but also a variety of different vegetables, in order to help maintain a healthy body and mind. But how we cook them and the recipes we eat them in can soon become monotonous and boring and start to turn us off from the veg that we once loved. Ingredients
1 sweet potato
An onion
1 small carrot
1/4 of a cabbage
2 gloves of garlic
2 red chillis
1 teaspoon of black mustard seeds
2 teaspoon of curry powder
Filo pastry
Method
I first grated the sweet potato, onion and carrot then thinly sliced the cabbage. I then placed the vegetables in a mixing bowl with the cloves of garlic, the red chilli, the black mustard seeds and curry powder.
Give them all a good mix together and leave the mixture for as long as possible so that the flavours all combine together nicely.
I rolled out a sheet of filo pastry and cut in half length ways and placed about a tablespoon of mixture into the bottom left corner. Brushing the pastry with water I then began to fold to make a triangle shape, making sure all the mixture is tightly inside the pasty. I sprayed with oil and popped into my air fryer on 180c for around 12 to 15 minutes. Checking on them regularly.
I served my air fried vegan samosas with a homemade raita and chilli jam.
