Air fried veg slaw

Looking for a new and fun way to add veggies into your family meals? This vibrant crispy air fried veg slaw is a hit with all of the family. It’s simple and quick to make, looks fantastic and tastes even better, gone are the days of soggy overcooked veg. Even the kids will love this dish with its slightly sweet taste, vibrant colours and crisp texture. I cooked this air fried crispy veg slaw on the Channel 5 TV show AIR FRYERS: SUNDAY LUNCH MADE EASY which first aired on 3rd April 2024. The colours remain beautiful and vibrant even after cooking and the vegetables come out of the air fryer so crispy! What will you be serving yours with?

Essential kit

You will need; an air fryer and mixing bowl.

Ingredients

1/2 a Red cabbage
1 Apple
2 Carrots
For the dressing;
Runny honey
Wholegrain mustard
Cider vinegar
To serve;
Chopped nuts
Parsley

Method

Thinly slice half a red cabbage, the separate the leaves before adding to a mixing bowl.
Next peel two carrots and cut into ribbons or thin slices before adding to the mixing bowl with the carrots.
Finally peel and thinly slice one red apple and add to the mixing bowl. Spray some olive oil then shake the mixing bowl.
Remove the crisp plate from the air fryer drawer and add the mixed vegetables.
Cook for 10 minutes on 180c giving it a stir or shake during the cooking.
Whilst they cook, make your dressing wit wholegrain mustard, honey and cider vinegar.
Serve your air fried veg slaw in a bowl, pour over the dressing and add your chopped nuts and a sprig of parsley.
A perfect vegetable side dish to accompany your Sunday roast!
