A taste of Mexico in your own dining room. Great flavours don’t have to be complicated or require an endless list of ingredients – half of which you have never heard of – and shouldn’t mean that you need to spend hours on end slaving away in a hot kitchen. This air fried turkey fajitas recipe is packed with flavour but can be whipped up and ready to serve in under 30 minutes. These fajitas are perfect for a quick weeknight dinner or a casual gathering with friends.
Bursting with bold spices and tender turkey, it’s a dish that promises to satisfy your craving for Mexican cuisine without the hassle of lengthy cooking times. If needed, you can easily switch out the turkey for chicken or steak strips, or a plant based alternative – just adjust your cooking time accordingly. I cooked my recipe for healthy Air fried turkey fajitas with Alexis Conran on the Channel 5 TV show “Air Fryers: Do You Have The Right One” first aired on 20th March 2024.
Serves two people.
Ingredients
X 3 mixed peppers
X 1 large onion
400g of turkey breasts
For the spice mix:
1 teaspoon of paprika
1 teaspoon of cumin
1/2 teaspoon of cayenne pepper
1/2 teaspoon of turmeric
1 teaspoon of garlic paste
1/2 teaspoon of ground coriander
1 thumb size piece of ginger grated
Lime – juice and the grated zest
Dash of oil to mix
Seasoning to taste
To serve:
1/2 ice berg lettuce
Handful of coriander
1 large red chilli pepper
Extra lime to serve
Method
Add the spice mix ingredients in to a bowl and combine together then set aside.
Slice the peppers, onions and turkey breasts and place in a bowl along with the spice mix.
Toss the mixture to ensure everything has an even coating of spice mix.
Pour the mixture into the air fryer and cook for 12 to 15 minutes on 180c. Remember to stir half way through.
Create a “bowl” with 2 or 3 ice berg lettuce leaves.
When the turkey mix is cooked, spoon your filling into the lettuce ‘bowls’ and sprinkle with coriander, chilli and a squeeze of lime.
Serve your air fried turkey fajitas as a simple and healthy lunch!
To turn this into a real feast you could also consider adding guacamole and sour cream when serving. These additional toppings not only enhance the flavour but also add a creamy texture that perfectly complements the spiced turkey and vegetables.
