Air fried sweet potato with tuna & bean salad

As if the humble jacket potato wasn’t already versatile enough! Not only can you change things up by using delicious sweet potatoes, but you can also cut down on cost and cooking time by using the air fryer rather than your oven to cook your sweet potatoes to perfection. The tuna and bean salad gives this recipe a very summary feel. You could even pair it with a cold glass of Pimm’s, or your favourite non-alcoholic drink. And eat it outside in the sunshine. With a crisp skin and a sweet twang this is a recipe that is loved and enjoyed by the whole family. I cooked this air fried sweet potato with tuna & bean salad with Alexis Conran on the Channel 5 TV show “Air Fryers: Do You Have The Right One” first aired on 20th March 2024.

Serves 2

Ingredients

2 sweet potatoes
1 can of mixed beans
1 can of tuna in spring water
The juice of 1 lemon
Seasoning
Handful of fresh parsley
2 tablespoons of quark soft cheese
A handful of salad topping pea shoots
Dash of extra light olive oil

Method

Start by rubbing the oil and seasoning on to your sweet potatoes piercing each one a few times with a fork. Set your air fryer to 190c and wrap your sweet potatoes in foil. Cook for 35 minutes. Depending on the size of your potatoes, you may need to cook them for a little longer.

While the sweet potatoes are cooking, mix together your tin of mixed beans and tuna in a bowl. Draining both before mixing. Add your squeeze of lemon juice and half of the parsley, season well.

After 35 minutes, carefully take off the foil and then place the sweet potatoes back in your air fryer for a final 10 minutes, turning halfway. This will ensure a nice crips finish to your sweet potato.

Serve your air fried sweet potato with soft quark cheese and top with your bean salad. Scatter over the remaining pea shoots and enjoy.
