Air fried stuffed butternut squash

I absolutely love to eat veggies when they are naturally in season which makes this air fried stuffed butternut squash perfect for those autumn months. This dish is not only delicious but also incredibly nutritious. Butternut squash is rich in vitamins, minerals, and antioxidants, making it a fantastic addition to any meal. Plus, when you stuff it with wholesome ingredients like couscous, kale, and apricots, you’re packing even more nutrients into each bite. This air fried stuffed butternut squash recipe makes for a super healthy lunch. Or is great to finish off the day after you’ve been out walking or watching the kids playing sports!

Ingredients

1 butternut squash

1 cup of cous cous

1/2 a red onion

1 handful of kale

A teaspoon of dried apricots

1 teaspoon of olive oil

1 teaspoon of runny honey

Pine nuts

Method

I started by chopping the end of my squash to make a bowl. Next I scooped out the inside and kept the filling for later. I then sprayed with fry light oil and popped into my air fryer for 30 minutes on 160c until the butternut was browned and tender and the sides were crispy. While the bowl was cooking I prepared the filling.
I cooked one cup of cous cous per the packet instructions then chopped half a red onion, some finely chopped squash, one hand full of kale and teaspoon of apricots. Then I mixed them all with a teaspoon of olive oil and a drizzle of honey. I then cooked all these ingredients in my air fryer on 200c for about 2 minutes checking and shaking the basket half way!
I mixed the veggies and the cous cous together and popped them into my ready baked squash bowl. Then topped my air fried stuffed butternut with pine nuts for added crunch. The beauty of this recipe is its versatility. You can easily customise the filling based on your preferences or whatever ingredients you have on hand. Try adding some cooked chickpeas or quinoa for extra protein, or swap the kale for spinach or Swiss chard for a different flavour profile. This meal makes a great vegetarian option that packs a real punch. No matter how you choose to make it, this air fried stuffed butternut squash is sure to be a hit at your dinner table!
