Air fried stuffed tomato with veggie cous cous

Air fried stuffed tomato is a simple dish that you can have as an appetiser or as a main dish for any occasion. They are quick to make with the air fryer and are filling and so tasty! This recipe is not only a great way to enjoy a delicious meal but also a fantastic method to use up any leftover vegetables you might have in the fridge. The combination of juicy tomato, flavourful couscous, and crunchy breadcrumbs creates a delightful texture and taste experience.

The freshness of the salad and the crunch of the pine nuts complement the warm, savoury stuffed tomato perfectly. Making for a well-rounded and nutritious meal. For those looking to add a bit of variety, there are many ways to customise this dish. You could add some crumbled feta or grated parmesan to the couscous mixture for an extra layer of flavour. Alternatively, mix in some chopped olives or sun-dried tomatoes to enhance the Mediterranean feel. If you’re a fan of herbs, a handful of fresh basil or parsley can add a delightful freshness to the stuffing.

This recipe is also versatile in terms of dietary preferences. To make it vegan, ensure the vegetable stock is plant-based and skip the cheese. For a gluten-free version, substitute couscous with quinoa or rice and use gluten-free breadcrumbs.
Leftovers can be stored easily in the refrigerator for up to two days. To reheat, simply pop the stuffed tomato back into the air fryer for a few minutes until it’s warmed through. This makes it a convenient option for meal prepping, allowing you to enjoy a delicious and healthy meal with minimal effort.

Ingredients

1 beef tomato

1 cup of cous cous

Vegetable stock

1/2 an onion

1/2 a pepper

1/4 courgette

Panko bread crumbs

Seasoning

Method

I cut the top off my beef tomato and scooped out the middle (saving the inside for a pasta sauce). Then I soaked a cup full of cous cous in vegetable stock. I fried up half an onion I had left over from last night, half a pepper and a quarter of a courgette (great way to use up bits from the fridge) a sprinkle of paprika, garlic powder, salt and pepper and mixed it with the cous cous. I stuffed my tomato with the veggie filling then I added a sprinkle of panko bread crumbs. And placed it on baking parchment and into my air fryer drawer on 180c for around 10 minutes. Be careful when removing your stuffed tomato from the air fryer.

I served my air fried stuffed tomato with a green salad and a scatter of pine nuts.

Whether you’re serving it as a starter at a dinner party or enjoying it as a main course on a busy weeknight, this air fried stuffed tomato is sure to impress. Its combination of vibrant flavours and textures will have everyone coming back for more.
