Air fried shiitake mushrooms

I made this delicious twist on an Asian style dish that I have been cooking for years. But I swapped my usual beef mince for Shiitake mushrooms, and it was delicious. Shiitake mushrooms are so rich in flavour, firm with a super meaty texture. I first started making this dish when we as a family decided we wanted to have more meat free days, and the Shiitake mushrooms did not disappoint, they seem to take this dish to another level! The mushrooms soak up all the flavour of the sauce and they have this wonderful sticky consistency. This Asian style air fried shiitake mushrooms dish is so easy to prepare using fresh, quality ingredients, and is a super-fast mid-week meal all the family will enjoy. Of course I cooked my dish in an air fryer, but you can create this dish on your hob too.

Serves 2

Prep time 15 minutes
Cooking time 12 minutes

Essential kit

You will need an air fryer, small mixing bowl and large mixing bowl.

Ingredients

200g of Shiitake Mushrooms
150g of Button mushrooms
I Bag of Microwave Rice
4 Tablespoons of Soy Sauce
1 Teaspoon of Ginger Paste
1 Teaspoon of Garlic Paste
2 Tablespoons of Honey
1 Teaspoon of Sriracha
Seasoning

To serve:

3/4 Spring onions
1 Red chilli
1/2 a teaspoon of sesame seeds

Method

To start I like to wipe my mushrooms, to help remove some of the dirt and cut in half, in similar size pieces and set aside. Grab a small bowl mix together your soy sauce, ginger paste, garlic paste, honey and sriracha (if you like it spicy add a little more) and mix well. In a larger bowl add in your mushroom and pour over your sauce, use a spatula and stir until all the mushrooms are coated. Set your air fryer to 190c and add the mushrooms directly into your air fryer basket and for 10 to 12 minutes, or until your mushrooms are cooked and begin to slightly brown at the edges, stirring halfway.

While your mushrooms are cooking, thinly slice your spring onions for the garnish along with your red chilli. Just before your dish has finished cooking, pop your rice in the microwave and cook as per instructions. Serve your air fried shiitake mushrooms on a bed of rice, and sprinkle over the spring onions and red chilli along with a scattering of sesame seeds.
