Air fried sardine tart

This air fried sardine tart is so simple to make. These delicate puff pastry tarts, filled with sardines and home-made green pesto make for an effortlessly delightful air fryer lunch. Of course you can use store bought green pesto if you don’t have all the ingredients or just want to save yourself time. The end result will still be the same. A delicious tart packed with flavour and nutrients and giving you a taste of something different.

Sardines might not be at the top of your list when you’re thinking about what you might like to eat for the week ahead. But I can assure you that they air fried sardine, green pesto, rocket and one nut tarts are divine!

Sardines are a nutritional powerhouse, rich in omega-3 fatty acids, protein, vitamins, and minerals. Omega-3s are essential for heart health, reducing inflammation, and supporting brain function. Sardines are also high in calcium, vitamin D, and vitamin B12, making them excellent for bone health, energy production, and maintaining a healthy nervous system. Additionally, sardines are one of the few foods naturally high in Coenzyme Q10 (CoQ10), which is crucial for energy production and antioxidant protection.

Ingredients

Store-bought puff pastry

1 egg, beaten for egg wash

Fresh basil

Fresh rocket

1 clove of garlic, chopped

Pine nuts

Olive oil

Sardines

Parmesan cheese

Method

I rolled my puff pastry quite thin then turned the edges a little and egg washed it. I then made my pesto by finely chopping a handful of basil (including stalks), some rocket, a clove of garlic, pine nuts and mixing with a drizzle of olive oil. Then I spread the pesto in the centre of the pastry and then added the sardines. Next I sprayed my pastry tart with oil and popped it into my air fryer on 180c for around 20 minutes. When ready I sprinkled my air fried sardine tart with Parmesan cheese and fresh rocket. Seriously delicious.
