Essential kit
You will need: an air fryer, mixing bowl and silicone moulds.
Ingredients
Store-bought puff pastry
5 tablespoons of double cream
1 egg
A thumb sized piece of ginger, grated
1 lime
1 stick of rhubarb, sliced
Method
I started by rolling out my puff pastry, (pre brought) but we can have a little cheat sometimes. I rolled quite thinly then placed into silicon cups. In a mixing bowl I added double cream, (about 5 tablespoons,) one egg, one thumb sized piece of grated ginger and the juice of one lime. Before juicing the lime, finely grate the lime to pop on the top for decoration later. I mixed the ingredients thoroughly then poured to fill the silicone cups half full. Then placed in some thinly sliced rhubarb.
I broke an egg into a small bowl and beat to make an egg wash. Add the egg wash to the edges of the pastry and popped into my air fryer on 160c for around 10 minutes, checking mid way.
I served my air fried rhubarb tarts with double cream whisked with half a lime until it makes little peaks.
These tarts are not only delicious but also a great way to make use of seasonal rhubarb. The combination of ginger and lime adds a refreshing twist, making each bite burst with flavour.
