Air fried portobello mushrooms

This is a super simple recipe for air fried portobello mushrooms but with maximum juicy flavours! The dry heat of the air fryer helps to evaporate any excess moisture. So that the mushrooms become slightly crispy on the outside whilst remaining tender on the inside. Mushrooms and garlic make the most delicious pairing and you’ll often find me ordering garlic mushrooms as my starter in a restaurant. But these, dare I say it, are even better.

Mushrooms are a super versatile food and tend to often be found in our fridge. They go great in a number of sauces, enhance a traditional ‘fry up’ breakfast, and a lasagne wouldn’t be the same without. But they can also be the star of the show rather than a supporting ingredient. There are more than 2,000 known varieties of mushroom in the world, which is mind blowing. But this recipe focuses solely on the portobello mushroom.

Portobello mushrooms are a fantastic source of essential nutrients like vitamins B and D. As well as minerals like potassium and selenium. Plus, garlic is known for its immune-boosting properties. Making this dish a powerhouse of health benefits. Plus being cooked in the air fryer means minimal oil used which is a much healthier way to cook them than you would find in most restaurants. And with the air fryer evaporating away the excess moisture the days of slippery slimy mushrooms are long gone.

Essential kit

You will need: an air fryer

Ingredients

3 portobello mushrooms

Handful of parsley

2 garlic cloves, grated

1 tablespoon of olive oil

Salad leaves

Parmesan cheese, grated

Method

So I sprayed my mushrooms with fry light garlic spray, added a little salt and pepper and popped in the air fryer cap side down for 6 to 7 minutes on 200c. Make sure your mushrooms are in a single layer and not overlapping in the air fryer drawer.

Mine were medium sized mushroom so for larger portobello mushrooms cook for around 8 to 10 minutes. Flip them over half way through the cooking time to ensure they are evenly cooked. Whilst the mushrooms were cooking I made a simple dressing. With a handful of parsley, two grated garlic cloves and a tablespoon of olive oil.

I served my air fried portobello mushrooms with a fresh garden salad, and a drizzle of garlic and parsley olive oil topped with a little grated parmesan cheese.

They make a great appetiser or could be served alongside a steak with some air fried sweet potatoes, or you could even add them as a topper on a wonderful burger to really elevate your burger game.
