Air fried mini quiche

Quiche is a great way to eat more eggs and although traditionally cooked in a pie crust, with this recipe you don’t have to. Cutting out the pastry and using the speedy air fryer makes this dish even quicker to prepare. This air fryer quiche recipe is so simple and versatile. I always pop whatever I have in the fridge in! For this recipe I used ricotta cheese, spinach and a spring onion in my air fried mini quiche.

This recipe is a great way to use up any ingredients from your fridge that are in danger of being forgotten about. Or you can plan out what you want to put in them. Mix things up and try a few different flavour combinations to see what you enjoy the most. You could add things like bell pepper, mushroom, cooked bacon etc. Just keep an eye on your cooking time as you make your own tweaks and changes to the recipe.

Storing these air fried mini crust-less quiches is simple. Once they have cooled, you can place them in an airtight container and refrigerate them for up to three days. If you want to keep them longer, they can be frozen for up to a month. Just thaw them in the refrigerator overnight and reheat them in the air fryer or microwave before serving.

Essential Kit

You will need and air fryer, a large mixing bowl and silicone cups.

Ingredients

Ricotta cheese

Spinach, chopped

1 spring onion

2 eggs

Method

In a large mixing bowl I just mixed the ricotta cheese, chopped spinach and spring onion with two eggs. Next I popped about a tablespoon of the quiche mixture into each silicon cup. Then I pop the silicone moulds into the air fryer drawer and cook the quiches on 180c for about 10 minutes. Check around half way through cooking as all air fryers are different and may cook at different speeds.

I served the mini crustless quiches with a simple green salad and a drizzle of salad dressing.

Air fried mini quiche are such a super light and delicious lunch that’s ready in under 15 minutes.

Not only are these air fried mini crust-less quiches perfect for lunch, but they also make a great breakfast option, and are particularly good if you normally grab breakfast on the go or have a tendency to skip it altogether. You can prepare them the night before and simply reheat them in the air fryer or microwave for a quick and nutritious start to your day. They are also ideal for meal prepping; you can make a batch at the beginning of the week and have a healthy snack or meal ready whenever you need it.
