These air fried mini chicken skewers are fun to add to your summer barbeque. Or make a great appetiser to go with your ‘fake-away’ meal. So quick, easy and cooked to perfection every time. I always use chicken thighs for this dish as I find them more tasty! These delicious air fried chicken satay skewers are ready in less than 15 minutes, thanks to the air fryer and they are sure to please!
This is one of things that I love most about the air fryer, along with how versatile it is and how easy it is to clean. So many foods can be cooked quicker than using the more traditional methods. Chicken is a staple in our house, it’s a versatile meat, great source of protein and a really easy texture to eat and digest. So it seems to be loved by all, including the fussy eaters. There are so many ways that you can ‘spice’ up your chicken but I absolutely love this recipe for it’s simplicity which still manages to deliver a great flavour.
Ingredients
Chicken thighs
2 tablespoons of peanut butter
1 tablespoon of honey
1 teaspoon of curry powder
Splash of soy sauce
Kale
1 teaspoon of brown sugar
Method
I started by slicing the chicken thighs and popped them onto mini wooden skewers. I then sprayed them with olive oil spray and popped them into my air fryer drawer for 12 minutes on 200c, turning them mid way. Cooking times may vary depending on what type of air fryer you use. Whilst they are cooking, I made the satay sauce with 2 tablespoons of peanut butter, one tablespoon of honey, a teaspoon of curry powder and a splash of soy sauce. I then prepped my kale, sprayed with oil and added a sprinkle of brown sugar. As soon as the chicken was ready, I removed it and then added the kale to the air fryer on 200c for around 4 to 6 minutes, shaking two or three times in between.
These air fried chicken skewers are super delicious for a lunch. Kale isn’t always my favourite go to salad option as it can sometimes be a little too bitter and overpowering but it fits perfectly with this recipe. Sprayed with a little oil and then cooked with brown sugar you’ll find your kale unrecognisable and simply divine. The sweet crisp kale adds flavour and texture to this dish.
