Essential kit

You will need an air fryer and baking parchment.

Ingredients

1 sheet of pre-rolled puff pastry

125g of goats cheese, crumbled

1/2 a beetroot, grated

1 egg, beaten

Vegetable oil spray

To serve:

A sprinkle of pine nuts

A drizzle of balsamic vinegar

A fresh green salad.

Method

I just rolled out my puff pastry and used a side plate as a guide to cut around and make a circle. Then I folded in the edges and broke up my goats cheese into the middle and grated my beetroot on top. I then gave the pastry edges an egg wash and sprayed with some oil. Next I placed my tart onto some baking parchment and popped into my air fryer drawer. I cooked on 185c for around 8 to 10 minutes until the pastry is puffed and golden brown.
I served my air fried goats cheese tarts with a sprinkle of pine nuts, a drizzle of balsamic vinegar and a fresh green salad.

These air fried goats cheese and beetroot tarts are not only a feast for the eyes with their vibrant beetroot topping but also a delight for the palate. The rich and tangy goats cheese pairs perfectly with the slightly sweet and earthy beetroot, creating a harmonious blend of flavours that is both satisfying and sophisticated.
