Air fried flapjacks

These easy air fried flapjacks are deliciously soft and chewy, and are quick and simple to make in the trusty air fryer. Air fryers are great for making flapjacks as they cook the mixture evenly and create a golden crust with a soft chewy centre. Flapjacks are not only easy to make, they are nutritious and can be stored in an air tight container for up to one week after making. Although it is unlikely that they would not have been eaten in the first few days!

Essential Kit

You will need an air fryer, mixing bowl, baking tray and baking parchment.

Ingredients

250g of porridge oats

85g of light brown sugar

30g of pumpkin seeds

30g of sultanas

150g of golden syrup

4 tablespoons of peanut butter

Method

Start by adding 250g of porridge oats, 85g of light brown sugar, 30g of pumpkin seeds, 30g of sultanas, 150g of golden syrup and 4 tablespoons of peanut butter to a large mixing bowl. Thoroughly mix all the ingredients together using a spatula.

Put your flapjack mixture into a baking tray lined with baking parchment. My baking tray is 30 cm x 20 cm which fitted into my single drawer air fryer perfectly. Firmly pat down the mixture using the spatular. Make sure the tray fits into the drawer of your air fryer first!

Cover the baking tray with tin foil and place into the air fryer. Cook on 180c for around 10 minutes. Then carefully remove the tin foil and cook for a further 3 minutes to brown the top of the flapjacks.

Carefully remove the tray from the air fryer and leave to cool before cutting your air fried flapjacks into 12 equally sized squares.
