These air fried fish fingers are a great little recipe that the kids can get involved in too! And these fresh home made fish fingers are so much tastier and healthier than shop bought frozen fish fingers or fish sticks as they are called in America. Making these air fried fish fingers at home ensures you know exactly what’s going into them, providing a healthier and more wholesome option for your family. Plus, involving the kids in the cooking process can be a fun and educational activity that encourages healthy eating habits from a young age.

For those following a gluten-free diet, you can easily substitute the cornflakes with gluten-free breadcrumbs or crushed rice crackers. This way, everyone can enjoy this tasty treat without any worries.
Storing leftover fish fingers is simple. Just place them in an airtight container and keep them in the fridge for up to two days. To reheat, pop them back into the air fryer for a few minutes until they’re hot and crispy again. They make a quick and easy lunch or dinner option when you’re short on time.


In addition to being a family favourite, these air fried fish fingers are perfect for meal prep. Make a larger batch and freeze them for later use. When you’re ready to eat, just reheat them directly from the freezer in your air fryer, adjusting the cooking time as needed.

Ingredients

2 small cod fillets

1 cup of cornflakes

Low fat mayonnaise

Ciabatta bread

Tartar sauce

Lettuce leaves

Method

I used two small cod fillets which I sliced into finger size pieces and set aside. Add about a cup of cornflakes to a bag and break them up into little flakes, then add your crispy coating to a bowl. Brush the fish fingers with some low fat mayonnaise and then dip them into the crushed cornflake coating. Carefully place the fish fingers into your air fryer and cook on 185c for around 10 minutes, turning half way. Depending on the size of your fingers you may need a little longer, so adjust the time accordingly. I served my air fried fish fingers on some chunky ciabatta, cut in half, spread with tartare sauce and crisp lettuce leaves.

These air fried fish fingers are not only delicious on ciabatta but can also be enjoyed in various other ways. For instance, you can serve them with a side of homemade chips for a classic fish and chips experience or use them to make a nutritious fish finger wrap with wholemeal tortillas and plenty of fresh veggies.

If you’re looking for a bit of variety, try experimenting with different coatings. Panko breadcrumbs can give a lighter, crunchier texture, while a mix of finely grated parmesan and whole wheat breadcrumbs can add a rich, savoury flavour. For a hint of spice, mix some paprika or cayenne pepper into the coating.
