Air fried chicken curry

A healthy cost-effective way to experience your favourite take away this air fried ‘fake-away’ chicken curry will be a real treat for the whole family. This recipe was inspired by wanting to enjoy our favourite take away foods but in a more controlled way. With the air fryer as our trusty kitchen companion, we’ve transformed traditional curry-making into a hassle-free experience. Saving time and effort while retaining all the mouth watering flavours. Gone are the days where making a curry means you are tied to a hot kitchen for hours to ensure that you food is infused with all the flavours from the spices you are using.

The air fryer saves you times (and mess) but ensures that your curry is still fragrant and delicious. And infused with all the wonderful flavours that you add in. I cooked this air fried chicken curry recipe with Alexis Conran on the Channel 5 TV show “Air Fryers: An Easy Way to Lose Weight” first aired on 28 February 2024!

Serves 2.

Ingredients

2 Chicken breasts
1 large onion
1 tinned chopped tomatoes
100ml chicken stock

For the Paste:
1 teaspoon of garlic paste
1 teaspoon of ginger powder
A teaspoon of cumin
1 teaspoon of ground fenugreek powder
1 teaspoon of cayenne pepper
A teaspoon of turmeric
Dash of ground nut oil
1 tablespoon of water
Handful of spinach
1 red chilli pepper
Handful of coriander leaves

Method

Start by thinly slicing your chicken and onions and set aside. Mix up your spice mix in a small bowl and add a dash of water to make a paste. Place your chicken and onions into a bowl along with your paste. Stir well and add in your can of tomatoes and your stock.

Next, if your air fryer has one then remove your crisper tray from the drawer before adding the ingredients so that it cooks in the actual basket. This will allow for more room for your ingredients and ensure your chicken cooks directly in the sauce you have made. Set your air fryer to 180c and cook for 20 to 25 minutes stirring throughout. Making sure that your chicken is cooked thoroughly before serving. For the last 3 minutes of the cook, add in your spring greens/spinach and stir well.

Serve your air fried chicken curry with a sprinkle chopped coriander and sliced red chilli.
