Air fried Eton mess

Picture this: it’s a warm sunny Sunday afternoon, you’ve spent a glorious morning enjoying your garden and entertaining family and friends who you have just delighted with your air fried pork shoulder for lunch and now it’s time to dazzle them with desert. This air fried Eton Mess is the perfect way to finish the meal. A traditional British desert combining textures and flavours to perfection, which the whole family can enjoy.

I cooked these delicious air fried Eton Mess meringues on the Channel 5 TV show AIR FRYERS: SUNDAY LUNCH MADE EASY which first aired on 3rd April 2024. Traditionally made with strawberries, meringue and whipped cream, Eton mess is a classic British dessert. Using the air fryer, the meringues should be ready in half the time it would take to cook in a conventional oven! Any recipe that tastes as good as this but is also a time and cost saver is a winner in my book.

Essential kit

You will need: an air fryer, an electric whisk, a large air fryer liner and a large mixing bowl.

Ingredients


220g of caster sugar
1 teaspoon of white vinegar

5 egg whites
1 teaspoon of corn flour

220g of caster sugar
1 teaspoon of vanilla extract

To serve:

200g of double cream

150g of fresh blueberries

150g of fresh raspberries

Method

First of all crack the five egg whites into a large mixing bowl and beat with an electric whisk whilst adding one tablespoon of castor sugar at a time.

When you have finished adding all the castor sugar, add a teaspoon of white vinegar, a teaspoon of corn flour and a teaspoon of vanilla extract. Continue to beat the meringues mixture with the electric whisk until the meringues have soft peaks. You should be able to turn the mixing bowl upside down without the meringue falling out!

Next, spoon the meringue mixture into an air fryer liner or tray and then place into the air fryer drawer. Cook on 120c for around 35 minutes on roast mode.

Remove from the air fryer and leave the meringue on a rack to cool for 20 minutes.

Break the meringue into pieces and add to your serving bowls in layers of meringue, whipped cream, blueberries and raspberries or other berries if you prefer.

This air fried Eton mess is the perfect dessert to finish your Sunday lunch!
