Air fried courgette kebabs

These air fried courgette and red pepper kebabs, are a delightful and healthy appetizer, snack or light lunch any time of the year. They’re a wonderful addition to your culinary repertoire. Especially if you’re looking for quick and easy dishes that pack a lot of flavour without the fuss. These kebabs are perfect for those warm summer days when you crave something light yet satisfying. Or as a bright and fresh option during cooler months. Whether you’re serving them at a family gathering, a casual get-together with friends, or simply enjoying them as a solo treat, these kebabs are sure to impress. They take only 10 minutes to cook so can be whipped up in no time at all.

These air fried courgette and red pepper kebabs are versatile and can be customised to suit your taste. Experiment with different herbs and spices or try using other vegetables such as aubergine or mushrooms. The possibilities are endless, and the results are always delicious. Essential Kit

You will need an air fryer and wooden skewers, soaked in water for 30 minutes.

Ingredients

Courgette

Preserved peppers

Vegetable oil spray

Garlic salt

To serve:

Salad leaves

Method

I thinly sliced the courgette length ways then popped the onto a plate and used kitchen roll to remove any excess moisture. I then sprayed them with vegetable oil and sprinkled them with a little garlic salt. This time I used preserved peppers as they have this incredible sweetness to them and they complement the courgette and roll so beautifully. I placed the peppers onto the ready cut courgette and rolled them up. Carefully pop your stuffed courgettes on to the wooden skewers and place them into your air fryer drawer. Cook them on 180c for 10 minutes turning in the middle to ensure that your kebabs are crispy on both sides.

When they are cooked I served my air fried courgette kebabs on a crisp salad with a rosemary infused olive oil dressing.

For those who enjoy a bit of a kick, try adding a sprinkle of crushed red pepper flakes or a drizzle of chilli oil to your kebabs before cooking. This will give them an extra layer of flavour and make them even more exciting to eat.
If you’re preparing these kebabs for a party or gathering, they can be prepped ahead of time. Simply assemble the kebabs and keep them in the fridge until you’re ready to cook. This makes it easy to have a tasty and healthy option ready to go without any last-minute stress.
