Serves 2
Prep Time 5 minutes
Cooking time 18 minutes
Essential kit
You will need an air fryer, kitchen roll and two mixing bowls.
Ingredients
X 2 Chicken breasts
X 6 Rashers of bacon (mine was pre-cooked as I had it left over from the day before)
X2 Large ripe tomatoes
X4 Lettuce leaves
X2 Dollops of mayonnaise
X 6 Slices of white bread
X 2 Eggs
Method
Pat dry your chicken breasts and place them in the air fryer on 190c for about 15 to 18 minutes, Depending on how big your chicken breasts are, they may take a little longer to cook. As your chicken is cooking in the air fryer, wash and dry your lettuce and slice your tomatoes. When you have 8 minutes left on your chicken, turn the breasts over and pop your two eggs into the air fryer basket. Prepare a bowl of water and some ice, you will be popping your eggs in the water bath to cool, before you remove the hard shell. Once the eggs are cooked, carefully remove them from the air fryer and place them into the water for a few minutes. Remove the chicken from the air fryer and leave it to rest.
While the chicken is resting, pop your bread into the toaster and lightly toast it. Remove the shells from the eggs and place the eggs into a bowl. Season well and add in about a tablespoon of mayonnaise. Stir until the egg has broken up a little. Slice your chicken breasts and start to build your club sandwich! Spread the remaining mayonnaise over each slice of toast and start to stack. First with your lettuce and tomato, then add on your chicken. Place on top another slice of toast, then spread with your egg mayonnaise and finally finish with your bacon. Cut your air fried club sandwich in half and serve with some chunky chips!
