Once upon a time every tried and tested recipe that you now love started out as an experiment in someone’s kitchen, and this air fried chicken, leek and bacon pie is no different. Who even knew that you could cook pie in an air fryer? I might sound like a stuck record, but your air fryer is such a versatile investment – you just need to be willing to give new things a try. It’s true that not every recipe will turn out as planned but with me here to do most of the experimenting for you, and then set you off on your own journey, there will definitely be more ‘hits’ than ‘misses’.
This air fried chicken, leek and bacon pie may have started as a bit of an experiment but wow, it really was delicious! The carrots could have done with being chopped a little smaller. But other than that it was a success! Such an easy, quick and tasty dish, what’s not to love!
Ingredients
350g of chicken thighs
1 large leek
1 carrot
10 rashers of streaky bacon
3 tablespoons of crème fraiche
150ml of chicken stock
1 teaspoon of whole grain mustard
Ready rolled puff pastry
Seasoning to taste
Method
I started by cutting my chicken things into similar size pieces and popping them into a large bowl. I sliced my leek and diced my carrots and added to the same bowl. Next slice your bacon and add the slices to the bowl too. Add a dash of olive oil and seasoning, stir well. I popped the mix into an oven proof dish and placed into my air fryer on 180c for 10 to 12 minutes, stirring in the middle. Meanwhile, take your pasty out of the fridge and make sure it’s a room temperature. Add in your crème fraiche, stock and mustard to the mix and stir well. Place back into your air fryer and cook for a further 6 to 8 minutes.
Once the filling is cooked carefully remove your dish and set aside. Roll out your pastry and place neatly on top. I gave mine a little egg wash too in order to create a nice crisp and browned finish. Place back in your air fryer and cook for around 5 minutes. Keeping an eye your pastry to ensure that it does not burn.
Depending what type of air fryer you have you may need to adjust the timings, so keep an eye on your food and if in doubt cook for a little longer.
Mostly make sure your chicken is cooked throughout.
