Air fryer chicken kebabs

This is a versatile, quick and easy dish that all the family will enjoy. I love this air fried chicken kebabs recipe as you can use any vegetables you like. Because I use whatever I have left over in the fridge! It is so versatile and using the air fryer is a quicker and healthier option. The juicy chicken, vibrant vegetables, and aromatic pesto make for a delightful combination. That’s sure to please even the pickiest eaters. The air fryer ensures the kebabs are perfectly cooked. With the chicken remaining tender and the vegetables slightly charred for a smoky flavour. These air fried chicken kebabs are a great addition to any BBQ, buffet or picnic. Cooking them in the air fryer will give you the confidence that the chicken is cooked completely through and ready to be enjoyed by all.

Whilst chicken thighs might not be your first choice cut of meat they are a great source of high-quality protein. Which is essential for muscle growth and repair. They contain various vitamins and minerals, including B vitamins (such as B6 and B12), which are important for energy production and brain health. Chicken thighs are also rich in iron, which helps in the formation of red blood cells and supports overall oxygen transport in the body. Additionally, they provide zinc, which is crucial for immune function and wound healing.

Essential kit

You will need: An air fryer and wooden skewers, soaked in water for 30 minutes.

2 chicken thighs

1 yellow pepper

4 baby tomatoes

Method

I sliced my chicken into bite size pieces and sliced my yellow pepper. Next I placed the chicken, yellow peppers and baby tomatoes onto each wooden skewer, taking care not to prick your finger on the sharp end. I placed them into the air fryer on 180c for around 25 minutes. But keep a close eye on your kebabs and keep turning whilst they cook so they don’t burn on one side. Remember that cooking times may vary depending on what type of air fryer you use and the size of your chicken pieces.

And take care when removing the kebabs from the air fryer as the drawer and the skewers will be hot. I served my air fried chicken kebabs with a homemade pesto and a side salad. 

So while chicken thighs do have a higher fat content compared to chicken breasts, the fat is primarily unsaturated. Which is beneficial for heart health. But cooking chicken thighs in an air fryer helps to reduce the overall fat content by allowing excess fat to drain away during cooking. So making it a healthier option than traditional frying methods. But the versatility of this dish allows you to customise it with your favourite vegetables. Making it a staple in your recipe collection. so enjoy these kebabs as a quick weeknight dinner or a fun dish to share with friends at your next gathering.
