Essential kit
You will need: an air fryer and mixing bowls
Ingredients
Carrots, grated
Sweet potatoes, grated
1 onion, grated
1 teaspoon of cumin
A teaspoon of mustard seeds
1/2 cup of breadcrumbs
Fresh coriander
2 eggs, beaten
Seasoning
Method
I began by peeling the sweet potatoes then grated them and the carrots and onion and popped them into a mixing bowl. Then I added a teaspoon of cumin, a teaspoon of mustard seeds, half a cup of bread crumbs, and a handful of fresh coriander. I broke and beat two eggs and added them into the mixture. Thoroughly mixed them all together and added a pinch of salt and pepper to season.
I shaped the patties by hand and then sprayed with fry light oil and placed them into my air fryer on 180 for around 20 minutes. Remember to turn them half way through the cooking to make them crispy on both sides.
I served my air fried carrot fritters with a yogurt and mint dip.
To take your fritters to the next level, consider experimenting with different seasonings and toppings. Try adding a pinch of smoked paprika for a hint of smokiness or sprinkle some sesame seeds on top for added crunch. You could even serve them with a tangy dipping sauce, such as sriracha mayo or tzatziki.
