Air fried butternut sliders

These air fried butternut sliders are a healthy alternative to meat sliders. They are not only delicious but also a fantastic way to enjoy the natural sweetness and texture of butternut squash in a fun and creative way. These sliders make for a delightful appetiser or a light meal. And they are perfect for entertaining guests or satisfying a mid-week craving for something a bit different yet nutritious.

Air fried sliders are a wonderful testament to how versatile and fun cooking with vegetables can be. The butternut squash, once air fried, has a lovely caramelised surface that pairs so well with the gooey mozzarella. And the tangy burst from the cherry tomatoes. If you choose to add chorizo, its smoky, spiced flavour adds a delightful depth that enhances the overall taste experience. Making your own mini buns, even with a pre-made bread mix, adds a personal touch that makes these sliders feel special. The air fryer does a fantastic job of baking them to perfection. Giving them a crispy exterior and a soft, fluffy interior. They hold up beautifully to the juicy and tender fillings, ensuring every bite is a perfect mix of textures and flavours.

Ingredients

1 butternut squash, peeled

1 onion, sliced

Mozarella

Cherry tomatoes

Chrorizo

Vegetable oil spray

Method

I first sliced the butternut squash and peeled the rind off. Then I placed sliced onion, mozzarella, cherry tomatoes, chorizo (remove of you want too) and popped another slice of butternut squash on the top. I then sprayed with fry light oil and popped in the air fryer on 160c for approximately 10 minutes. The result is a beautifully caramelised butternut squash that is tender and bursting with flavour, perfectly complemented by the melted mozzarella and the juicy tomatoes. The chorizo, if included, adds a smoky, savoury kick that takes these sliders to another level.

I pre made the dough using a bread mix, I know it’s cheating a little bit. I wasn’t quite sure how these were going to turn out. Next I rolled them into small balls then sprayed with fry light oil and popped them in the air fryer on 180c for around 8 to 10 minutes. Then gave them a good shake half way through the cooking to make sure the haven’t stuck together!
When the butternut sliders are cooked, I lifted the top and popped in some lettuce and sprinkle some sesame seeds on the top.

I served my air fried butternut squash sliders with a mayonnaise and chilli dip. They were really scrummy.
