We started our day off with these delicious and easy savoury air fried brunch muffins.
The aroma of bacon and cheese wafting through the kitchen is an irresistible invitation to indulge in a hearty breakfast. These muffins are not just a treat for the taste buds but also a convenient and nutritious way to kickstart your day. Imagine biting into a warm, fluffy muffin with pockets of melted cheese, juicy tomatoes, and crispy bacon. It’s the perfect combination of flavours and textures to fuel your morning.
Breakfast is the most important meal of the day – or so they say. And whether or not you buy into that is your choice but what I know is that I don’t function at my best if I’m wandering around hungry, instead I’m constantly distracted by thoughts of food. Which makes this air fried brunch muffin recipe a perfect way for me to start my day, they are quick and easy to make and you can whip them up in batches and freeze for later to make them even more convenient, which is something that I absolutely love doing.
Essential kit
You will need: an air fryer, mixing bowl and silicone moulds
Ingredients
4 slices of bacon
3 eggs
2 tomatoes
A hand full of grated cheese
Salt and pepper
Method
I started with popping four slices of bacon into my air fryer for around 5 minutes on 180c. Keeping one for placing on the top.
Then I cracked three eggs into a mixing bowl, added two tomatoes, a hand full of grated cheese and the air fried bacon and seasoned with salt and pepper. I then gave it a thorough mix and poured the mixture gently into silicon moulds, not right to the top! (I made that mistake).
To make it a vegetarian dish just leave out the bacon of course!
Place the silicone moulds carefully into your air fryer drawer and cook for around 20 to 25 minutes on 180c. Always check they are cooked through before eating.
Remove your air fried brunch muffins from the drawer and leave to cool before serving.
The delightful smell of freshly cooked muffins with a hint of bacon and cheese will tempt anyone nearby. These air fried muffins are perfect for a quick breakfast, a brunch gathering, or even a snack throughout the day. If wanted you could pair the breakfast muffins with a fresh green salad, you could base your salad on spinach for an extra boost of nutrients. Or keep them as a stand alone option for a light bite, or an easy to grab breakfast on those mornings where it’s all go.
