Air fried broccoli bites

This delicious recipe is a simple way to use up any vegetables you may have left over from your Sunday roast dinner. These air fried broccoli and cauliflower bites are ready in just 8 minutes and are a healthier alternative to deep fried snacks. They are full of flavour and so crispy on the outside. The are perfect for snacking on or make an interesting appetiser. Also a good way to get the children to eat one of their five a day! I had some broccoli and cauliflower left over from Sunday lunch that didn’t make it into my cauliflower cheese bake. So these are already part boiled.

Essential kit

You will need: an air fryer and mixing bowls

Ingredients

Cauliflower and/or broccoli

100g Plain flour

1 Egg

Panko bread crumbs

Seasoning

Method

First I dipped the vegetables in flour and seasoned with a sprinkle of paprika. Next dip them into the beaten egg and finally give your vegetable bites a good covering of panko bread crumbs.

Next I put them into my air fryer on 180c for around 8 minutes. Check them half way through the cook and turn them if necessary.

These air fried broccoli and cauliflower bites make such a tasty mid afternoon snack when dipped into some spicy chilli mayo.

Broccoli and cauliflower are both excellent sources of vitamins, minerals, and fibre, making them a healthy choice for any meal or snack. Which means having a multitude of different ways to cook them is a real bonus so you don’t get bored of them. Plus, by air frying them instead of deep frying, you’re cutting down on added fats and calories. Making these bites even more nutritious, but you still have a crispy delicious snack.

One of the best things about this recipe is how versatile it is. You can customise the seasoning to suit your taste preferences. Try adding some garlic powder, onion powder, or grated Parmesan cheese for extra flavour.
