If you love a sweet, or savoury, muffin to go with your morning cup of coffee but you want to swap them out for something a bit healthier and at the same time you want to cut your costs down, then whipping up a batch of these air fried brekkie oak cups is ideal. They also make the perfect on the go breakfast for those of us always in a hurry rushing out the door in the mornings. Using just a few simple ingredients and your air fryer you will soon have a breakfast to rival any coffee shop but at a fraction of the cost and much healthier on the body. These air fried oat cupcakes are not only delicious but also incredibly versatile. You can customize them with your favourite add-ins like nuts, dried fruits, or even a dollop of yogurt on top.
You can even bake these in batches and then freeze for when you want them to make them even more convenient, simply thaw over night or pop them in the microwave for a few seconds.
These air fried oat cups are the perfect option for a quick, simple and healthy breakfast on the go!

Makes x 6 small cup cakes.
You will need silicone moulds.
Ingredients
60g of rolled oats
1 large egg
1/2 a ripe banana
50 ml of almond milk
1/2 a teaspoon of vanilla extract
1/2 a teaspoon of baking powder
1/2 a teaspoon of cinnamon
15g of 70% dark chocolate Keeping some to grate on the top
1 teaspoon of chia seeds
Method
Put all the ingredients into a blender and mix until smooth. Keep a little of the dark chocolate until after they have been cooked. Place the mixture in to silicon moulds until two thirds full to allow for them to rise.
Place the silicone moulds in to your air fryer and cook for 12 to 15 minutes on 140 C. Check half way as cooking times may vary depending on what type of air fryer you use. When they have finished cooking, carefully remove your air fried oat cups from the silicone moulds and place on a cooling rack.
Enjoy whilst still warm or pop them in an airtight container to be enjoyed at a later date.
