Air fried breakfast muffins

These air fried breakfast muffins are super tasty and easy dish to prepare on a lazy Sunday morning. If you enjoy a convenient and wholesome breakfast or brunch then these egg muffins made in the air fryer are just perfect for you! If you’re looking to simplify your mornings whilst making sure that you get a healthy breakfast to start you day then I highly recommend whipping up a couple of batches of these air fried breakfast muffins. Once cooled they can be placed in an air tight container and then popped into the freezer. Allowing you to take them out to defrost the night before you need them. They can be eaten cold or heated back up – which is my preference.

If you prefer a vegetarian option, simply omit the meat and load up on veggies. And perhaps some herbs like chives or parsley for added freshness. The possibilities are endless, allowing you to tailor the recipe to your taste preferences and dietary needs. In addition to being a great breakfast option, these muffins can also be enjoyed as a snack or a light meal any time of the day. Pair them with a side salad for a more substantial meal. Or enjoy them on their own as a quick and satisfying snack.

Essential kit

You will need an air fryer, mixing bowl and silicone moulds.

Ingredients

3 slices of Pancetta

3 eggs

A handful of Cheddar cheese, grated

Salt and pepper

Method

I pre cooked my pancetta in the air fryer on 180c for about 4 minutes. It crisps up so fast as the pancetta I used is quite thin. I then whisked my eggs, grated cheese, salt and pepper in a mixing bowl. Next I placed the mixture evenly between my silicon moulds. I broke some of the bacon up and popped that into the mixture too. Saving some for the top when they are done. I popped my moulds into the air fryer and cooked on 180c for around 10 minutes or until the muffins were golden brown.

We like to serve our air fried breakfast muffins with a cheeky dollop of ketchup.
