Here is a simple but delicious air fried blueberry cupcakes recipe that you can whip up in no time. If you don’t have blueberries, you could use raspberries, chopped strawberries or chocolate chips instead
– they all taste amazing and when paired with a cup of tea create a lovely little ‘afternoon tea’ vibe, why not invite the girls over to enjoy them with you.
Since I’ve discovered that you can use the air fryer for baking, (seriously, what can’t it do), I haven’t stopped experimenting and now I’ve got a little collection of different cake recipes that I love to make in it. The more I experiment and practice the more confident I become with my cakes, I’m certainly more confident backing them in the air fryer than I am the oven, and I love how simple the air fryer makes the whole process.
These air fried blueberry cupcakes make a great little treat, take time out from your busy day and settle down with a good book as you tuck into one, or you could nibble on one alongside your favourite morning protein shake for a more filling and delicious breakfast. With just a few simple ingredients and a couple of silicone moulds, you can whip up a batch of these delectable cupcakes in no time.
Essential kit
You will need: an air fryer, mixing bowls and silicone moulds
Ingredients
Blueberries
50g of soft butter
75g of caster sugar
1 egg
75g of Elmlea plant double cream
1 tablespoon of milk
125g of plain flour
1 teaspoon of baking powder
Method
Mix together in a bowl 50g of soft butter, 75g of caster sugar, 1 egg, 75g of Elmlea plant double cream, 1 tablespoon of milk, 125g of plain flour and 1 teaspoon of baking powder. I used a hand whisk until the mixture is think and gooey. In a separate bowl pop the blueberries in with a table spoon of plain flour, coat the blueberries in the flour. This seems to stop them from sinking whilst they cook.
Then place the blueberries into the mixture, giving it a good stir.
Using silicon cases, spoon in the mixture. I cooked mine in batches, 3 at a time in my air fryer. Cook at 140c for around 40 minutes, checking half way.
Always check that your air fried blueberry cup cakes are cooked through before serving. Homemade cakes are always a win, so having the confidence that your air fryer will cook these air fried blueberry cupcakes to perfection every time takes the worry out of baking.
