Air fried beetroot hummus

Today’s snack is air fried beetroot hummus with roasted chickpeas cooked in the air fryer! This nutritious beetroot hummus such a vibrant pink colour and is perfect for dipping pita, chips or vegetables. Alternatively use as a filling for vegan sandwiches.

Not only is this a delicious and healthier version of store-bought dips but it’s also going to give you a little boost. This is a powerhouse combination for your body. Beetroot is low in calories, contains powerful antioxidants and the fibre in beetroot can help support a healthy gut. Add in the fact that chickpeas are high in protein, packed with vitamins and minerals such as folate, iron and manganese, and have a low glycemic index. Meaning they won’t spike your blood sugar, and you really do have the perfect combination.

This air fried beetroot hummus can be stored in an airtight container in the refrigerator for up to a week. Making it a convenient option for meal prep. Incorporating this air fried beetroot hummus into your diet is not only a great way to enjoy a tasty and healthy snack. But also an excellent method to include more vegetables and plant-based protein in your meals. Essential kit

You will need: an air fryer, mixing bowl and food processor.

Ingredients

3 large beetroots

1 tin of chickpeas

2 tablespoons of tahini

1 large lemon

2 cloves of garlic, grated

Olive oil

Method

I boiled my beetroots for around 30 minutes with the skins on. Alternatively, you can roast or steam them. I left them to cool slightly and removed the skins. I sliced my beets and sprayed with fry light oil and then placed in my air fryer for 8 minutes on 200c.

Once cooked, I removed the beetroot from the air fryer and popped into a blender with a tin of chickpeas, 2 tablespoons of tahini, the juice of one large lemon, two grated cloves of garlic and plenty of salt and pepper. Save some of the chickpeas for serving.

I gave it a blitz in the food processor until smooth then served in a bowl with a few chickpeas on top and drizzled with olive oil. My air fried beetroot hummus is so good for dipping so grab a bag of your favourite crisps. Or slice up some pitta breads and settle down for movie night knowing you have the snacks handled. If you like a bit of spice, consider adding a pinch of chilli powder or a dash of hot sauce to the mixture. This can give your hummus a delightful kick and make it even more exciting to eat. Additionally, you can garnish the hummus with fresh herbs like parsley or coriander for added freshness and flavour.
