Air fried beetroot muffins

The humble beetroot is so healthy and oh so tasty. These tasty air fried beetroot muffins are moist, and so quick to make! You’ll love these muffins for breakfast, dessert or a snack.

Imagine biting into a warm muffin with a slight crunch on the outside and a soft, tender inside. The earthy sweetness of the beetroot pairs beautifully with the subtle spice of turmeric and the savoury notes of Parmesan cheese. The grated carrots add a mild sweetness and extra moisture, making each bite melt in your mouth. The aroma as they cook is a mouth-watering blend of fragrant spices and fresh vegetables. Essential kit

You will need: An air fryer, a mixing bowl and cupcake size silicon moulds

Ingredients

1/2 a beetroot, grated

2 carrots, grated 

Handful of parmesan cheese

1 egg

1 teaspoon of turmeric

100g of plain flour

1 teaspoon of onion granules

Salt and pepper

Method

Grate half a beetroot into a mixing bowl, along with 2 grated carrots, a handful of parmesan cheese, 1 egg, a teaspoon of turmeric, 100g of flour, a teaspoon of onion granules and season with salt and pepper.

Mix all the ingredients together well, then place a tablespoon into each silicon mould. The pop the silicone moulds into your air fryer drawer on 180c for around 15 minutes. Keep a close eye on muffins whilst they cook as cooking times may vary depending on what type of air fryer you use.

Once cooked, carefully remove the moulds from the drawer. remove the muffins from the moulds and place on a cooling rack.

Air fried beetroot muffins are perfect little savoury snack that’s delicious whether served hot or cold.
