Air fried avocado

If you’re looking for a new and exciting way to enjoy avocado, this air fried avocado recipe is a game-changer. Seriously who knew that you can cook avocado in the air fryer! This air fried avocado was absolutely delicious, I have never cooked an avocado before, let alone air fried one. I saw this and thought I would give it a try. I would best describe this dish as a take on a guacamole but crispy on the outside with a warm and creamy interior. This dish makes a healthy appetizer or light lunch that’s simple to prepare and is ready in just 10 minutes. Avocados are not only delicious but also packed with nutrients.

They are a great source of healthy fats, particularly monounsaturated fats, which are known to support heart health. Avocados also contain a variety of vitamins and minerals, including vitamin K, vitamin E, vitamin C, and B vitamins, as well as potassium. The fibre content in avocados can help support digestive health, and their antioxidant properties can aid in reducing inflammation and protecting against chronic diseases.

Essential kit

You will need an air fryer and mixing bowl.

Ingredients

1 avocado

Panko breadcrumbs

Cherry tomatoes

1 red onion

Fresh coriander, chopped

A squeeze of lime.

To serve:

1 red chilli, sliced

Green salad leaves

Method

I halved my avocado and dipped it into panko bread crumbs, then placed into my air fryer on 200c for around 10 minutes. While the avocado was cooking, in a bowl I mixed cherry tomatoes, red onion, coriander and a squeeze of lime. When the avocado was cooked, I popped my mix on top with a sliced red chilli and served on a bed of salad leaves.

Super simple but packed with superfoods to help support a healthy body and full of flavour, this air fried avocado felt like a real secret that I had uncovered.
