Air Fryer Croquettes

MAKES 6 croquettes

KIT you will need an air fryer, blender, baking paper, mixing bowls and whisk.

Ingredients for air fryer croquettes

2 Large eggs

100g of Cooked and shredded chicken

400g of Mashed potato

1 teaspoon of Onion powder

50g of Plain flour

50g of Breadcrumbs (Finely blitzed)

1 teaspoon of dried parsley

Method

Start by preparing the mashed potatoes in a bowl, then season them with onion powder, dried parsley, salt, and pepper to taste. Mix to ensure the seasoning is evenly distributed.

Next, grind the breadcrumbs in a blender to make them fine for coating. Arrange three bowls on your work surface. In the first bowl, place plain flour. In the second, beat two eggs, and in the third, add your freshly ground breadcrumbs. This will create a simple breading station: flour first, then eggs, and finally the breadcrumbs.

Now, take a spoonful of your mashed potato mixture and flatten it into your palm, creating a small disk around 6 to 7 cm in diameter. Carefully place some shredded chicken in the center of the disk. Gently fold the edges of the mashed potato around the chicken to fully enclose it, then shape the mixture into a smooth, even ball, ensuring there are no cracks or openings.

Once your ball is formed, dip it into the flour. Next, dip it into the beaten eggs, and then roll it in the breadcrumbs, ensuring an even and complete coating. Repeat this for the rest of your mixture, making sure each croquette is well-covered.

Spray the basket with oil, then place your croquettes in a single layer, making sure they’re not touching. Spray the croquettes with oil, then set your air fryer to 185°C and cook for 12-15 minutes, or until golden brown. Depending on the size of your croquettes, you may need to adjust the cooking time slightly. If they’re not browning, simply spray with more oil and cook for a few more minutes.

Serve your crispy air fryer chicken croquettes as a starter with a dipping sauce like mayo or mustard, or as a main dish with a fresh salad or crispy fries.

Tips for Air Fryer Croquettes

1. Use Cooked Chicken
Use pre-cooked or leftover chicken either shredded or finely chopped. Rotisserie chicken works great for quick prep.

2. Chill the Filling
After mixing the filling (usually a combo of chicken, mashed potatoes or béchamel, cheese, herbs, etc.), refrigerate it for at least 30 minutes. This firms it up and makes shaping easier.

3. Shape Evenly
Form the croquettes into uniform logs or balls so that they will cook evenly. About 2 tablespoons per croquette is a good size.

4. Double Coating = Extra Crunch
Dip your croquettes in flour, then egg wash, and then breadcrumbs. For extra crunch, repeat the egg and breadcrumb coating. Panko breadcrumbs give a crispier texture.

5. Preheat the Air Fryer (this is optional)
Preheat your air fryer for 3 to 5 minutes at 190°C (375°F) before cooking. It helps start the crisping process right away.

6. Lightly Spray with Oil
Use a spray bottle or a brush to coat the croquettes lightly with vegetable oil. This promotes golden browning without the need for deep frying.

7. Don’t Overcrowd the Basket
Leave space between the croquettes so that the hot air can circulate. Cook in batches if needed depending on the size of your air fryer basket.

8. Flip Halfway Through
Flip them gently halfway through cooking to ensure even browning on all sides.

9. Watch the Time
Cook for 10 to 12 minutes at 190°C, or until golden brown and heated through. Do keep an eye on them though, as every air fryer is a bit different.

10. Let Them Rest
Rest your croquettes for 2 or 3 minutes after cooking. This helps the filling to set and avoids burning your mouth on hot cheese or béchamel.
